Buffalo Cauliflower Pizza

Crispy roasted cauliflower tossed in tangy buffalo sauce, piled onto a bubbling mozzarella pizza and finished with a drizzle of ranch or blue cheese—spicy, cheesy comfort food with a veggie-forward twist.

Ingredients

1 medium head of cauliflower, cut into small florets

2 tbsp olive oil

1/2 tsp garlic powder

1/2 tsp salt

1/2 cup buffalo sauce, divided

1 lb pizza dough (store-bought or homemade)

1/2 cup pizza sauce or additional buffalo sauce for the base

2 cups shredded mozzarella cheese

1/4 cup crumbled blue cheese or ranch dressing, for drizzling

2 green onions, sliced

Fresh parsley or cilantro, for garnish

Instructions

1. Preheat oven to 425°F (220°C). Toss cauliflower florets with olive oil, garlic powder, and salt on a baking sheet.

2. Roast for about 20 minutes, flipping halfway through, until edges turn golden and slightly crispy.

3. Toss the roasted cauliflower with 1/4 cup buffalo sauce and let it sit a few minutes to soak in.

4. Roll out pizza dough on a floured surface and transfer to a pizza pan or baking sheet.

5. Spread pizza sauce or a thin layer of buffalo sauce over the base, then sprinkle on mozzarella.

6. Scatter the buffalo-tossed cauliflower evenly over the cheese.

7. Bake at 450°F (230°C) for 12 to 15 minutes, until the crust is golden and the cheese is bubbling.

8. Drizzle with remaining buffalo sauce and blue cheese or ranch, then top with green onions and fresh herbs before slicing.

Notes

Don’t skip roasting the cauliflower first, or the pizza will turn out watery instead of crispy.

Go easy on the sauce layers—buffalo sauce is potent and can overwhelm the crust.

Add a pinch of cayenne to the cauliflower before roasting for extra heat.

Leftovers keep in the fridge up to 3 days; reheat in the oven or air fryer to restore crispiness.
