Buffalo Chicken Stuffed Sweet Potatoes

Tender roasted sweet potatoes stuffed with creamy buffalo chicken, melted cheddar, and topped with blue cheese, green onions, and fresh parsley. This hearty, high-protein dinner is easy to make and packed with bold flavor.

Ingredients

4 medium sweet potatoes

1 tbsp olive oil

1/2 tsp salt

2 cups cooked shredded chicken

1/3 cup buffalo sauce

2 tbsp unsalted butter, melted

4 oz (115 g) cream cheese, softened

1/2 cup shredded cheddar cheese

1/2 tsp garlic powder

1/2 tsp onion powder

1/4 tsp black pepper

1/4 cup crumbled blue cheese or feta cheese

2 green onions, thinly sliced

2 tbsp chopped fresh parsley

Ranch or blue cheese dressing (optional)

Instructions

1. Preheat the oven to 400°F (200°C).

2. Rub the sweet potatoes with olive oil, sprinkle with salt, and place on a baking sheet.

3. Bake for 45–55 minutes or until fork-tender.

4. Meanwhile, combine the shredded chicken, buffalo sauce, melted butter, cream cheese, cheddar cheese, garlic powder, onion powder, and black pepper in a saucepan over medium heat.

5. Cook for 4–5 minutes, stirring frequently, until the cheeses melt and the mixture becomes creamy.

6. Remove the baked sweet potatoes from the oven and let cool for a few minutes.

7. Slice each sweet potato lengthwise and gently fluff the inside with a fork.

8. Spoon the buffalo chicken mixture evenly into each sweet potato.

9. Top with crumbled blue cheese or feta, sliced green onions, and chopped parsley.

10. Drizzle with ranch or blue cheese dressing if desired and serve immediately.

Notes

Rotisserie chicken works great for a quick shortcut.

Adjust the buffalo sauce to make the filling milder or spicier.

Store leftovers in an airtight container in the refrigerator for up to 4 days.

Freeze for up to 3 months and reheat before serving.

Freshly shredded cheddar melts more smoothly than pre-shredded cheese.
