2 boneless skinless chicken breasts
3 tbsp extra virgin olive oil
2 tbsp fresh lemon juice
4 cloves garlic, minced
2 tsp dried oregano
1 tsp smoked paprika
1/2 tsp ground cumin
1 tsp salt
1/2 tsp black pepper
1 1/2 cups cherry tomatoes, halved
1 large cucumber, sliced
1/2 red onion, thinly sliced
1 cup Kalamata olives
1 cup crumbled feta cheese
1 cup hummus
1 cup tzatziki sauce
4 pita breads, warmed
3 tbsp balsamic glaze
1/4 cup chopped fresh parsley

1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper.
2. Coat the chicken with the marinade and refrigerate for at least 30 minutes.
