Mac and Cheese Meatloaf Casserole

Hearty Mac and Cheese Meatloaf Casserole layers a savory, glazed meatloaf base under a creamy, golden mac and cheese topping—one dish, two comfort-food classics, zero fuss.

Ingredients

1.5 lbs ground beef (80/20)

2 cups elbow macaroni, cooked

2 cups sharp cheddar cheese, shredded

1 cup milk

2 eggs

3/4 cup breadcrumbs

1/2 cup onion, diced

1/3 cup ketchup or BBQ glaze

Garlic powder, salt, and pepper to taste

Instructions

1. Preheat oven to 350°F (175°C) and grease a 9×13 casserole dish.

2. Mix ground beef, one egg, breadcrumbs, diced onion, and seasonings in a large bowl. Press evenly into the bottom of the dish.

3. Spread the ketchup or BBQ glaze over the meatloaf layer.

4. Whisk milk, remaining egg, and shredded cheddar in a saucepan over low heat until smooth. Fold in the cooked macaroni.

5. Pour the mac and cheese mixture over the meatloaf layer.

6. Bake uncovered 45 to 50 minutes, until meatloaf reaches 160°F internally.

7. Broil 2 to 3 minutes for a golden top, watching closely.

8. Let rest 10 minutes before slicing and serving.

Notes

Let the casserole rest a full 10 minutes before cutting, or the layers will slide apart.

Swap ground beef for ground turkey or a beef-pork blend if you prefer.

Try a Colby-Jack or smoked gouda blend for a different flavor twist.

Stir in crumbled bacon or diced jalapeños to the mac and cheese layer for extra kick.
