1½ lbs boneless skinless chicken breasts, cut into strips
3 tbsp extra virgin olive oil
Juice of 1 lemon
4 cloves garlic, minced
1 tsp dried oregano
1 tsp smoked paprika
½ tsp ground cumin
1 tsp salt
½ tsp black pepper
1 cup Greek yogurt
2 tbsp fresh dill, finely chopped
2 cloves garlic, grated
1 tbsp fresh lemon juice
1 tbsp extra virgin olive oil
¼ tsp salt
¼ tsp black pepper
4 pita breads, warmed
2 cups shredded romaine lettuce
1 cup cherry tomatoes, halved
1 small cucumber, diced
¼ small red onion, thinly sliced
½ cup crumbled feta cheese
¼ cup sliced Kalamata olives
Fresh parsley, chopped, for garnish
1. In a large bowl, whisk together olive oil, lemon juice, minced garlic, oregano, smoked paprika, cumin, salt, and black pepper to create the chicken marinade.
2. Add chicken strips and toss until evenly coated. Cover and marinate for at least 30 minutes.
3. In a small bowl, mix Greek yogurt, fresh dill, grated garlic, lemon juice, olive oil, salt, and black pepper until smooth. Refrigerate until ready to use.
4. Heat a grill pan or skillet over medium-high heat.
5. Cook marinated chicken for 6–8 minutes, turning occasionally, until golden brown and fully cooked.
6. Warm pita breads until soft and flexible.
7. Spread dill yogurt sauce inside each pita bread.
8. Fill pita with romaine lettuce, cherry tomatoes, cucumber, red onion, cooked chicken, feta cheese, and Kalamata olives.
9. Garnish with fresh parsley and an extra drizzle of dill yogurt sauce.
10. Fold pita around filling and serve immediately with lemon wedges if desired.
