8 oz block feta cheese, room temperature
1/4 cup plain Greek yogurt or cream cheese
1/4 cup olive oil, plus more for roasting
1 large sweet potato, cubed
1-2 zucchini, sliced
1 small red onion, sliced
1 can chickpeas, drained
2 cloves garlic
1 lemon, juiced and zested
Small handful fresh herbs (dill, parsley, or mint)
Salt, pepper, and chili flakes to taste
1. Preheat oven to 425°F (220°C).
2. Toss sweet potato, zucchini, red onion, and chickpeas with olive oil, salt, pepper, and one minced garlic clove. Spread on a sheet pan without crowding.
3. Roast 25-30 minutes, flipping halfway, until golden and slightly charred at the edges.
4. While vegetables roast, blend feta, yogurt, olive oil, remaining garlic clove, and lemon juice in a food processor until smooth and fluffy.
5. Spread whipped feta on the bottom of a bowl or plate.
6. Pile the warm roasted vegetables on top.
7. Finish with a drizzle of olive oil, fresh herbs, lemon zest, and chili flakes if desired.
